2 bunches of asparagus
1 clove garlic
100 g of ham
50 ml of olive oil
1. Peel the onion and cut into julienne. Peel and chop the garlic. Clean the asparagus by removing the fibrous part and wash them. Blanch 1 minute and cool them in ice water. Drain and cut into matchsticks. Preheat oven to 180 degrees.
2. Have a source ham refractory cover with parchment paper and bake about 15 minutes, until crisp. Allow to cool and crush in a mortar. Break the eggs into a bowl and beat them.
3. Heat oil and stir onion 5 minutes. Add the garlic and asparagus, and cook 4 minutes. Add the eggs and season. Cuajarlos, a gentle and removing heat, about 5 minutes. Add the ham and serve.
